    Preserving Cantabrian Sea Legacy

    The roots of Conservas Olasagasti delve into the depths of the Cantabrian Sea. The tale unfolds in the late 19th century when Salvatore Orlando discovered the shores of Getaria, Gipuzkoa, captivated by the unparalleled quality of its fish—such as the Bonito de Norte or the Cantabrian Anchovy. A trailblazer and advocate for the canning industry in the region, Salvatore married Simona Olasagasti, whose name now graces the brand. Today, their descendants persist in upholding a century-old legacy within the company.

     

    The meticulous recipe adheres to a carefully crafted production process, commencing just a stone's throw from the factory, in the tempestuous and icy waters of the Cantabrian Sea. Here, unique species thrive, imparting an incomparable flavor and texture to their preserves.

     

    Familiar figures in the local fishing fleets, where Basque fishermen, known as arrantzales, employ traditional, ecosystem-respecting fishing techniques. Along the shores of this sea, in bustling fish markets, they handpick the freshest catches for their preserves.

     

    Strategically positioned a mere few kilometers from the ports of Ondarroa, Lekeitio, and Getaria, their factory welcomes fresh raw materials each dawn. With a meticulous touch, they hand-clean, separate, cook, and package the finest portions of these products—a timeless, artisanal process echoing the practices of centuries past. An ancient technique, not rendered obsolete.
