Ingredients:
- 1 can of Olasagasti's Tuna Fillets with White Beans
- 200g fresh spinach
- 150g cherry tomatoes, halved
- 1 red onion, thinly sliced
- 2 cloves garlic, minced
- 4 tablespoons basil pesto
- 2 tablespoons extra-virgin olive oil
- Juice of 1/2 lemon
- Zest of 1 lemon
- Salt and pepper to taste
Instructions:
- Sauté the vegetables: Heat olive oil in a large frying-pan over medium heat. Add the red onion and garlic, sautéing until softened and lightly browned.
- Add tomatoes: Stir in the cherry tomatoes and cook for 2–3 minutes, or until they begin to soften.
- Add vegetables: Add the spinach and white beans from the tuna can to the frying-pan. Cook for 5–7 minutes, stirring occasionally, until the spinach is wilted.
- Add tuna: Flake the tuna and add it to the frying-pan. Heat for a few more minutes until everything is well combined.
- Make the dressing: In a small bowl, whisk together the basil pesto, lemon juice, lemon zest, salt, and pepper.
- Serve: Divide the mixture among serving plates. Drizzle with the pesto dressing and enjoy!
