Mimosa Salad Sandwich with Tuna

Perfect for a picnic, a quick lunch at work, or a trip, this easy-to-carry Mimosa Salad Sandwich is both delicious and convenient.

Ingredients

  • 4 slices of whole grain bread
  • 200 g of Yellowfin tuna
  • 2 hard-boiled eggs
  • 1 medium carrot, grated
  • 1 medium potato, boiled and grated
  • 1 small red onion, finely chopped
  • 2 tablespoons mayonnaise
  • 1 tablespoon sour cream
  • 1 teaspoon mustard
  • Salt
  • Pepper
  • Fresh parsley, for garnish
  • Black olives, sliced, for decoration
  • Pepper

Preparation

  1. Prepare the Tuna: Open the can and flake the tuna into a bowl.
  2. Prepare the Eggs: Peel and finely chop the hard-boiled eggs.
  3. Mix the Ingredients: In a large bowl, combine the tuna, chopped eggs, grated carrot, grated potato, and finely chopped onion.
  4. Make the Dressing: In a separate bowl, mix together the mayonnaise, sour cream, mustard, salt, and pepper.
  5. Combine: Add the dressing to the tuna mixture and stir gently to combine.
  6. Assemble the Sandwich: Spread the tuna salad mixture evenly over two slices of bread. Top with the remaining bread slices.
  7. Garnish: Slice the sandwiches in half, garnish with fresh parsley, and decorate with black olive slices on top.
