    For Rödel, time is not an enemy — it’s an ingredient. The brand’s meticulous preparation methods haven’t changed much since the 19th century, because perfection needs no shortcuts. The moment the catch reaches port, the selection process begins. Only the finest specimens are chosen — sardines with the right size, texture, and freshness. They are hand-cleaned, rinsed, and flash-fried at 250°C for precisely three minutes, then left to drip-dry naturally at a cool temperature.

    But what makes Rödel truly unique is what happens next: the sardines are arranged one by one, in staggered rows, inside their tins — and then left to age. Over time, the oil preserves the fish and gently transforms its texture. Experts agree: Rödel sardines should be enjoyed after at least six months of ageing, with their flavour and tenderness peaking around 18 months or more. The result? A silky bite, rich in umami and nuance — the essence of preserved seafood, elevated to an art.
