Ingredients
- 1 tin of Rödel Mackerel Fillets with Chablis Wine
- 2–3 heads of Belgian endive
- 1 green apple, julienned
- 2 tbsp natural yogurt or crème fraîche
- 1 tsp Dijon mustard (optional)
- Chives or parsley, finely chopped
- Freshly ground black pepper
Preparation
- Prepare the endive leaves: Separate the leaves carefully, rinse, and pat dry. Choose the largest leaves for rolling.
- Make the filling: Mix the julienned green apple with yogurt or crème fraîche, mustard if using, chopped herbs, and a pinch of black pepper.
- Add the mackerel: Gently fold the mackerel fillets into the apple mixture, keeping the pieces visible.
