La Truitelle – Rethinking the Art of Fish Preserves
Discover La Truitelle, a French brand bringing together gastronomic craftsmanship, organic farming and a new approach to sustainable fish preserves. Born in the heart of the Cathar Pyrenees, La Truitelle was founded on an ambitious idea: to create the first organic-certified preserves made from small fish, offering an innovative culinary experience while reducing pressure on wild marine resources.
The project was developed by François Isambert, who managed the La Fajolle fish farm between 2008 and 2019. Located at 1,150 metres above sea level in the upper Aude Valley, the farm had been certified organic since 2001. Several years of research and experimentation followed, dedicated to mastering the fish-rearing cycle, developing recipes and refining preservation techniques. In spring 2019, La Truitelle finally launched its first range of preserves.
Today, most of the brand’s fish are raised at its own fish farm in Saint-Rome-de-Cernon, in the Aveyron region, while the remainder comes from partner fish farms across Occitanie. This close connection to local production allows La Truitelle to combine careful farming practices with a distinctive gastronomic vision.
A New Perspective on Fish Preserves
Traditionally, the canning industry has relied on species such as sardines, mackerel, tuna and sprats. Yet growing pressure on marine resources has made the search for alternatives increasingly important. La Truitelle offers a different perspective, focusing on small farmed fish rather than adding to the demand for traditionally harvested species.
Its approach is rooted in the belief that exceptional preserves can be created through thoughtful sourcing, careful production and a deeper understanding of the environmental impact of food. By working with young fish, La Truitelle also aims to reduce resource consumption within aquaculture, demonstrating how a different choice of species can open up new possibilities for the world of gourmet preserves.
Organic Farming with a Lighter Footprint
Sustainability extends beyond the fish themselves. La Truitelle’s young trout consume around half as much feed as standard portion-sized trout and up to four times less than larger trout, helping reduce the demand for fishmeal and fish oil.
The feed used is certified organic by Ecocert and is made with fishmeal and fish oil sourced from sustainable fisheries, using by-products from aquaculture and fishing that would otherwise go unused. The brand is also working with a specialist producer of insect-based ingredients made from recycled green waste, exploring future alternatives that could further reduce its impact on marine ecosystems.
Packaging is another part of this commitment. The metal tins and cardboard packaging are fully recyclable, the cardboard used for printed sleeves contains 80% recycled paper, and the labels use plant-based adhesives. Clear sorting instructions help consumers dispose of packaging responsibly.
For La Truitelle, sustainability is not a single claim but an ongoing process of rethinking how fish are raised, prepared, packaged and enjoyed.
The La Truitelle Promise
At the heart of La Truitelle lies a simple ambition: to prove that gastronomic pleasure and environmental responsibility can go hand in hand. By combining organic-certified fish farming, carefully developed recipes and a forward-thinking approach to marine preservation, the brand is redefining what small-fish preserves can be.
La Truitelle invites food lovers to discover a different side of European fish preserves — one shaped by French craftsmanship, regional production and a commitment to finding better ways to enjoy the flavours of the sea.
