Ingredients (Serves 4):

  • 1 tin of FANGST Limfjord Blue Mussels No.1
  • 1 kohlrabi, peeled and thinly sliced
  • 100–150 g smoked fresh cheese (or creamy fresh cheese)
  • ½ fennel bulb, very thinly sliced
  • Fresh dill, finely chopped
  • Optional: a drizzle of extra virgin olive oil

Preparation

  1. Prepare the base. Peel the kohlrabi and slice it into very thin rounds. Arrange the slices on a serving plate.
  2. Assemble the layers. Add a small spoonful of smoked fresh cheese on each slice of kohlrabi. Place one mussel on top.
  3. Add freshness and texture. Top with thinly sliced fennel for a crisp contrast, then sprinkle with freshly chopped dill.
