Ideal for a vibrant and flavorful dinner, this sardine toast combines the delicate and fresh taste of Pinhais sardines with roasted cherry tomatoes and sautéed spinach. Served over crispy rustic bread and finished with a drizzle of olive oil, this dish offers a satisfying blend of textures and bright Mediterranean flavors.

Ingredients

  • 1 tin of Pinhais Selection sardines (preferably in tomato sauce)
  • 2 slices of rustic bread or sourdough
  • 200 g of cherry tomatoes (whole or halved)
  • 2 handfuls of fresh spinach
  • 1 clove of garlic (optional)
  • 2-3 sprigs of fresh dill (optional)
  • Extra virgin olive oil
  • Salt and pepper to taste
  • Red pepper flakes (optional)

Preparation

  1. Roast the tomatoes: Preheat the oven to 200°C (390°F). Place the cherry tomatoes on a baking tray, drizzle with olive oil, and season with salt and pepper. Roast for 15-20 minutes or until they are slightly caramelized and begin to burst.

  2. Sauté the spinach: While the tomatoes are roasting, heat a large pan with a drizzle of olive oil. If using garlic, finely chop it and sauté for 1-2 minutes. Add the spinach and cook until wilted, about 3 minutes. Season with salt and pepper.

  3. Toast the bread: Toast the bread slices in a pan or oven until golden and crispy. You can rub a little garlic on them for extra flavor if you like.

  4. Assemble: Place the toasted bread on a plate. Top with sautéed spinach and roasted tomatoes. Lay the sardines (with or without the tomato sauce) over the spinach and tomatoes.

  5. Finishing touch: Drizzle with a bit of extra virgin olive oil and, if desired, sprinkle red pepper flakes for a spicy kick. Garnish with fresh dill sprigs for added fragrance.
