Surprise your guest with a sardine hollandaise recipe.
Ingredients
- 1-2 Nuri sardines in spicy olive oil
- 250 g butter
- 3 egg yolks
- 3 tbsp water
- 1 tbsp lemon juice
- Pepper
- 4-8 chicories (1-2 per person)
- Olive oil for frying
- Salt
- 2 cloves of garlic
- Pepper
- 250 g freshly cut good quality boiled ham (butcher’s ham, artisan ham)
- 1 baguette
Preparation
- To make the hollandaise, briefly drain the sardines together with the chilli pepper, cucumber and carrot slices and chop up finely.
- Place into a large bowl, set aside the sardine oil from the tin.
- Melt the butter, but do not heat too fiercely.
- Add the egg yolks, water and lemon juice to the sardines.
- Season with a little pepper.
- Place the bowl over a bain marie and whisk until the mixture is creamy and the volume has approximately doubled.
- Take the bowl off the heat and carefully pour in the melted butter whilst continuing to stir the whole time.
- Finish by adding the oil from the sardine tin.
- Transfer the hollandaise to a pre-warmed vessel and put in a warm place until ready for use.
- Halve the chicories.
- Add olive oil, a little salt and the crushed cloves of garlic to a pan and fry on
the cut side for about 2-3 minutes over a high heat. - Reduce the heat and turn the chicory.
- Fry on the other side for 2 minutes.
- Season with pepper.
- Take out of the pan and arrange on plates.
- Spoon over the Nuri hollandaise and serve with ham and a good baguette.
