Chicory with Nuri hollandaise and boiled ham

Surprise your guest with a sardine hollandaise recipe.

Ingredients

  • 1-2 Nuri sardines in spicy olive oil
  • 250 g butter
  • 3 egg yolks
  • 3 tbsp water
  • 1 tbsp lemon juice
  • Pepper
  • 4-8 chicories (1-2 per person)
  • Olive oil for frying
  • Salt
  • 2 cloves of garlic
  • Pepper
  • 250 g freshly cut good quality boiled ham (butcher’s ham, artisan ham)
  • 1 baguette

Preparation

  1. To make the hollandaise, briefly drain the sardines together with the chilli pepper, cucumber and carrot slices and chop up finely.
  2. Place into a large bowl, set aside the sardine oil from the tin.
  3. Melt the butter, but do not heat too fiercely.
  4. Add the egg yolks, water and lemon juice to the sardines.
  5. Season with a little pepper.
  6. Place the bowl over a bain marie and whisk until the mixture is creamy and the volume has approximately doubled.
  7. Take the bowl off the heat and carefully pour in the melted butter whilst continuing to stir the whole time.
  8. Finish by adding the oil from the sardine tin.
  9. Transfer the hollandaise to a pre-warmed vessel and put in a warm place until ready for use.
  10. Halve the chicories.
  11. Add olive oil, a little salt and the crushed cloves of garlic to a pan and fry on
    the cut side for about 2-3 minutes over a high heat.
  12. Reduce the heat and turn the chicory.
  13. Fry on the other side for 2 minutes.
  14. Season with pepper.
  15. Take out of the pan and arrange on plates.
  16. Spoon over the Nuri hollandaise and serve with ham and a good baguette.
