  • Brioche bread
  • Butter (recommended: sweet butter)
  • 48 gr Olasagasti Cantabrian anchovies fillets
  • Pitted green olives
  • Radishes
  • Pickled green peppers (piparras)
  • Mixed sprouts for a salad accompaniment


  1. Cut olives, pickled green peppers, and radishes into bite-sized pieces. Set aside.
  2. Slice a thick piece of brioche, toast it, and cut it into strips the size of an anchovy fillet.
  3. Generously spread butter on the brioche.
  4. Place a Cantabrian anchovy fillet on each brioche strip.
  5. Decorate with reserved olives, pickled peppers, and radishes. Add sprouts or edible flowers.
  6. Serve with a side salad of additional sprouts.
